CREAM CHEESE PANCAKE

Ingredients
2 oz cream cheese
2 eggs
½ tsp cinnamon
2 tbsp coconut flour
1/2 to 1 packet of Stevia in the Raw (or whatever Stevia you like)
Instructions
Blend or beat together all of the ingredients until smooth.
You'll make two pancakes, so heat up a non-stick pan or skillet with salted butter or coconut oil on medium-high.
Make them just like you would normal pancakes. Try to cook it most of the way on one side and then flip!


ALSO IF U LIKE IT SALTY THEN AVOID THE SWEETENER AND ADD SALT , I EAT THIS PANCAKE WITH SPICY INDIAN MANGO PICKLE.
Top with butter and/or a sugar-free maple syrup (check your labels, they aren't all created equal!)

I really enjoy these but I make them with the eggs, cream cheese and not the coconut flour.  This is the first time I saw that added and it may be worth trying although they come out quite well without it.  I mix up in a Ninja blender and I get 3 pancakes but they are thin so that is probably one of the differences.  The best part is that they are guilt free and taste quite good.  Others have made them without the sweetener or cinnamon and used them for wraps and I want to try that next.
