Carbs in eggs ??
« on: August 26, 2017, 07:19:59 AM »
I've noticed a unsettling trend in my LCHF and that is that my blood sugar spikes after I've eaten just eggs and bacon.  Yesterday morning I had 2 eggs and 2 slices of thick cut bacon and yet my bg spiked way up.  I have always thought eggs had no carbs, but I guess I was wrong.  I'm beginning to question whether I should be accounting for the protein content as well as the fat.  Anyone have opinions that they care to share??

Well, there are not a lot of carbs in an egg.  One large chicken egg has 0.3 carbs so two eggs would have 0.6 carbs.  The bacon can be a problem depending on if there are added sugars.  Some brands have sugar added so you have to check the label.  Everyone is different but I do have to keep an eye on protein as too much will raise my bg.  Still, two eggs and two slices of bacon don't cause me to have much of an increase in bg.

I'd be more suspicious of the bacon too . . . sugar, brown sugar or maple syrup are very often used in the seasoning/curing of bacon and/or ham.

Eggs do have carbs, and bigger eggs have more carbs . . . I say that because I use jumbo eggs over here & I count them as .5 a gram. But they're still about the perfect food for our LCHF programs, compared to most anything else we have at our disposal!

I third the thought that the bacon is the most likely culprit for the spike.  Did you change brands maybe?

As a T2 anything I'd say to a T1 could be irrelevant, but, how big is the spike, and how long does it take to recover and did you bolus for the spike. The best way forward is to research with eggs + something else for the next few days. Then you can be sure if it was the bacon slices.

Funny but I never considered the bacon to be the 'culprit'.  I usually buy whatever bacon might be on sale as long as it doesn't have sodium nitrite or nitrate in it.  Now that you mention the possibility of sugar, I tend to agree with you all.  I best continue practicing the fine art of "reading the label".  I love bacon and would hate to think of giving it up.

No need to give it up - just check for sugar, brown sugar, honey, maple syrup, etc.

I can't do without eggs, especially for breakfast. Easy to cook for me, so I eat them almost everyday. I'm not much of a bacon eater, but if these people suspect the bacon, it very likely is the culprit. Make an alteration for a couple of days as suggested and you'll know for sure.
