Fried Green Tomatoes

1 large egg, beaten with a little water
dash of salt
splash or two of tabasco
3 or 4 green tomatoes, sliced no less than 1/4 inch thick
2 or 3 handfuls of low carb breading mix
oil, butter, bacon drippings or combination for frying

Add salt & tabasco to beaten egg; combine crumbs and cornmeal in a shallow dish. Heat oil, etc., in skillet. Pat tomato slices dry with paper towels and then dip into egg, dredge in breading mix. Saute until breading is crispy and golden brown.

To make gravy from drippings, add 2 cups cream, continue cooking until it thickens, stirring constantly. Season with salt & pepper to taste. Ladle over tomatoes if desired.

Shanny - Could you refresh my memory where I can find the ingredients for low carb breading.  I've misplaced my copy I had printed out.

And this can be made even lower carb by decreasing the almond flour and increasing the vital wheat gluten and or parmesan.

So sorry for that oversight - guess I was asleep at the switch!  ~slp~
