Holiday Jello Salad

Growing up, my mother made this salad for the holidays.  To my happiness, with one modification, it's low carb/ high fat.

1 cup boiling water
1 6 oz pkg sugar free lime or lemon jello
1 20 oz can crushed pineapple (per original recipe.  I replace with 1/4 cup blueberries.  Can also eliminate fruit completely)
1 8 oz pkg cream cheese, softened
2 cups heavy cream
1 cup chopped walnuts or pecans

In large bowl, pour boiling water over gelatin and dissolve, adding half cup water.  Refrigerate until thickened but not set, about an hour.

Add softened cream cheese to gelatin mixture, blend til smooth.  Whip heavy whipping cream til soft peaks form.  Fold into jello, then add the blueberries.  Pour into serving dish, refrigerate for 4 hours, until set.

I have always enjoyed jello salad.  I have had it with cottage cheese before but never with cream cheese and HWC.  I am going to have to try this.
