Tuna meltl

I waffled back and forth whether to post this in the Lounge or Recipe section.  It's certainly not a new recipe, but this is what I had for dinner yesterday.

Tuna salad:
1 can tuna, drained
1 TBSP chopped walnuts
1 TBSP dill pickle relish
a little bit of chopped onion

Some mayo, some Dijon mustard and some sour cream, mixed together until I liked the flavoring

I put half onto half an avocado, then topped with cheddar cheese.  Into the microwave until the cheese was melted. 

Was so good, I went ahead and finished off the tuna salad and the other half of avocado.

Well, that is just brilliant !  My favorite sandwich when I ate bread was a tuna melt and I never thought of this.  Putting it on avocado and melting the cheese in the microwave sounds like it should work great.  I'm going to do this soonest.

It's a splendid recipe! I'm embarrassed to admit how often I make a portion of food, thinking to save the rest for another meal or snack. But find myself going back just as you did! But MY metabolism can't compensate for this, so it's no darn wonder I can control my blood sugar but not my weight! Mercy sakes!  :-[

I find myself following your lead too, in mixing mayo & sour cream more often anymore. What a great high-fat combo!
